Coconut Flour Chocolate Chip Cookies


Ideal for Low carb diet

These soft, melt-in-your-mouth chocolate chip cookies are made with coconut flour and coconut oil.



Prep time:10 mins          Total time: 27mins
Cook time: 15-17 mins   Serves: 12            


INGREDIENTS

  • ⅓ cup coconut flour
  • ¼ cup coconut oil, melted
  • ¼ cup sugar free maple syrup
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 whole eggs
  • ⅓ cup dark chocolate chips

METHOD
  • Preheat oven to 350 degree F, and prepare a baking tray with parchment paper.
  • In a large bowl stir together the coconut flour, coconut oil, maple syrup, vanilla extract, salt and eggs. Stir until the batter is combined. Add in the dark chocolate chips and evenly distribute them in the batter.


  • Using a heaping tablespoon drop onto the baking tray. Flatten the cookies with your hand.

  • Bake for 15 to 17 minutes until its gets golden brown. Let the cookies cool on the baking sheet for 10 minutes. Transfer to a wire rack to cool completely.


  • Store them in the fridge.
