SPINACH SOUP

INGREDIENTS
- Onion - 1medium finely chopped
- Garlic - 3 cloves, finely chopped
- Vegetable stock or water - 1cup
- Milk/whipping cream - for topping
- Palak/spinach - 2 cups chopped
- Gram flour - 1 tablespoon
- Bay leaf - 1
- Butter - 1 tablespoon
- Crushed Black pepper
- Salt as required
- Peppercorns as required
METHOD
- First rinse the spinach in water, then chop them and keep them aside.
- Melt the butter in a sauce pan, add the bay leaf, peppercorns and fry for few seconds.
- Add the chopped garlic till the garlic is browned.
- Add the chopped onions, saute till the onions are softened.
- Add the chopped spinach, stir in salt and pepper.
- Add the gram flour, stir and pour water. Bring it to a boil and simmer for 3 minutes.
- When the mixture's heat is reduced , blend in a mixer till smooth.(remove bay leaf before making it a paste)
- Keep the soup back on the stove and simmer it for 2-3 minutes.
- Serve spinach soup with cream on the top.
