Panini


GRILLED PANINI


   


Prep time: 15 mins.         Total time: 25 mins
Cook time: 10 mins

INGREDIENTS
  • Sourdough/Ciabatta/French bread (don't use soft bread like wonder bread)
  • Olive oil
  • Basil pesto - 1/2 cup
  • Balsamic Vinegar - 2 teaspoon
  • Melted butter - 1 tablespoon
  • Red and green bell peppers - thinly sliced
  • Onions - thinly sliced
  • Chicken/Beef/Turkey - 4 slices
  • Garlic - 2 cloves minced
  • Shredded parmesan cheese - 1/2 cup

METHOD:

  • Preheat the panini grill to max heat. Cut and mix vegetables with balsamic vinegar, salt, pepper, olive oil and minced garlic.



  • Place those vegetables on the grill and close the lid. Place them aside when you get good grill marks and some nice carmelization.





  • Spread pesto over the bread slices and place grilled onions, bell-peppers in between the sandwich. 




  • Apply melted butter on top of the bread slices to get good grill marks.



  • Press the sandwiches in preheated panini grill until crispy and golden brown, about 10 minutes.
