SPINACH SOUP



SPINACH SOUP

Cook time:15 mins          


INGREDIENTS
  • Onion - 1medium finely chopped
  • Garlic - 3 cloves, finely chopped
  • Vegetable stock or water - 1cup
  • Milk/whipping cream - for topping
  • Palak/spinach - 2 cups chopped
  • Gram flour - 1 tablespoon
  • Bay leaf - 1
  • Butter - 1 tablespoon
  • Crushed Black pepper 
  • Salt as required
  • Peppercorns as required

METHOD
  • First rinse the spinach in water, then chop them and keep them aside.
  • Melt the butter in a sauce pan, add the bay leaf, peppercorns and fry for few seconds.
  • Add the chopped garlic till the garlic is browned.
  • Add the chopped onions, saute till the onions are softened.
  • Add the chopped spinach, stir in salt and pepper. 
  • Add the gram flour, stir and pour water. Bring it to a boil and simmer for 3 minutes.
  • When the mixture's heat is reduced , blend in a mixer till smooth.(remove bay leaf before making it a paste)
  • Keep the soup back on the stove and simmer it for 2-3 minutes.
  • Serve spinach soup with cream on the top.
